Coriander 'Slow Bolt' (Coriandrum sativum) is a highly valued cultivar specifically bred to delay the process of "bolting," where the plant rapidly sends up a flower stalk and goes to seed, causing the leaves to lose their desirable flavour and become bitter. This characteristic makes 'Slow Bolt' an excellent choice for gardeners, especially in regions with fluctuating temperatures or longer growing seasons, like many parts of South Africa, as it extends the harvest period for its aromatic leaves. The vibrant, fresh, and citrusy flavour of 'Slow Bolt' coriander leaves makes them an indispensable ingredient in a vast array of global cuisines, from zesty salsas and guacamole in Mexican dishes to fragrant curries and chutneys in Indian cooking, and fresh garnishes in Southeast Asian recipes. It's almost exclusively used as a fresh herb to impart its distinctive green, pungent notes to savoury dishes.
