Yellow mustard (Sinapis alba or Brassica alba) is an annual plant primarily cultivated for its pale yellow to tan seeds, which are the mildest among the common mustard varieties, offering a gentle pungency with a slightly sweet undertone. In South Africa, these seeds are famously the primary ingredient in the bright yellow prepared mustard condiment, a beloved accompaniment to hot dogs, boerewors rolls, and sandwiches. Beyond the condiment, whole yellow mustard seeds are widely used in pickling brines, especially for gherkins and onions, and feature prominently in spice blends for curries, chutneys, and marinades, adding both flavour and a slight thickening agent. Ground yellow mustard can also be incorporated into dry rubs for meats or used as an emulsifier in dressings, while the plant itself is sometimes grown as a green manure or cover crop to enrich soil.
