Flat leaf parsley (Petroselinum crispum neapolitanum), also known as Italian parsley, is a widely popular biennial herb in South African and global cuisine, distinguished by its vibrant green, broad, flat leaves and a robust, clean, slightly peppery flavour that is generally considered more intense and less bitter than its curly-leafed counterpart. It's an indispensable fresh herb, used extensively as a garnish to add colour and freshness to almost any savoury dish, from roasted vegetables and grilled meats to soups and stews. Beyond its visual appeal, flat leaf parsley is a foundational ingredient in many traditional recipes, providing a fresh counterpoint in Mediterranean salads like tabbouleh, enriching sauces, and enhancing flavour in marinades and dressings.
