Sorrel 'De Belleville' (Rumex acetosa), often simply known as French Sorrel, is a highly esteemed perennial herb recognised for its broad, arrow-shaped, bright green leaves and its distinctively sharp, tangy, and intensely lemony flavour. This robust acidity makes it a prized ingredient in both classic French cuisine and contemporary dishes, offering a unique zing that few other herbs can replicate. It is most famously used to create traditional sorrel soup, where its leaves melt down to a creamy, piquant base, and in sauces, particularly those served with rich fish like salmon, as its tartness brilliantly cuts through fattiness.
